Not OP but I used to work for a large bread manufacturing facility and I did a lot of the testing for R&D and Equipment as well as procurement and recommendations for some of our customers on equipment. I never personally opened a small bakery myself but I purchased a lot of commercial baking equipment over the years so I have a good idea of the cost of those things. First I’d say obviously your building is going to be the most money followed by the equipment. Ovens, Mixers, Proofers, Coolers & Freezers, Dishwasher. If you go the used route you can save a lot but you’ll need someone to regularly service things as on a smaller scale if one essential piece of equipment breaks you might be unable to produce anything until that is fixed. After those initial costly purchases you should have most of what you’d need minus staff, raw materials, and your local licensing/permits required to operate a bakery wherever you are which I’d expect to run you several thousand more dollars.

The Recent ovens I tested produced such a strong steam injection. That it was equivalent to a competitor in. So for example I would have to steam a loaf for 5 seconds in a Recent as compared to 20 seconds in a competitor’s oven having more reliable equipment.
